Preheat oven to 375 degrees F.
Cover cookie sheet with parchment paper. (Yes, this is a must! You can re-use the same piece numerous times to be less wasteful, but if you do not use the parchment it really does change the outcome!)
Put sliced potatoes into a large bowl, and toss with olive oil using a spatula. If only adding salt, sprinkle in and toss some more. All of the additional (*) spices are optional. If you are using more than one, mix them together in a small bowl, then sprinkle over potatoes and toss some more.
Scatter potatoes onto cookie sheet in single layer. Bake for 20 mins., remove from oven and flip over, and bake for 25-30 mins longer on opposite side. Serve.
