1. Poke holes in top of squash, place on paper towel in microwave, cook on high for 20 minutes until soft. Remove from microwave and cool slightly. (Optional: place squash on foil and place on cookie sheet. Heat in oven at 350 degrees for 40 minutes until soft)
2. Cut squash in half length-wise and remove seeds with spoon. Scoop out squash into mixing bowl. Add butter, sugar, pepper and nutmeg. Beat with a whip until smooth
