Grilled Salmon Seafood Pasta Salad
Ingredients
2 Grilled salmon steaks, cut into small pieces.
1 1/4 cup Uncooked rotini pasta
1/2 Red bellpepper, diced
1/2 cup Asparagus, 1 inch pieces
1/4 cup Red onion-diced
Dressing:
2 tbs Fat-free mayo
2 tbs Sour-cream
2 tsp Lemon juice
1 tsp Dijon mustard
1 tsp Garlic powder
1 tbs Fresh dill-chopped
Salt and pepper to taste.
Preparation
1. Combine dressing ingredients in a small bowl...set aside.
2. Cook pasta according to directions, rinse and drain well. Steam red pepper and asparagus for about 3 minutes, or until tender. Toss salmon, pasta, veggies in a serving bowl. Pour dressing over pasta salad and toss. Serve immediately or chill unti ready to eat.
