| 2/3 cup | Soy sauce |
| 2/3 cup | Oil (canola/olive) |
| 2 tbs | Crystalized ginger--chopped fine |
| 2 tbs | Fresh lime juice |
| 1 tsp | Garlice powder--I used pressed garlic cloves |
| 2 tbs | Dry onion |
| 1 t | Emeril Essence |
1. Mix all ingredients together--set aside a bit of the marinade for basting if so inclined.
2. Marinate pork for 36 hrs---I do two at a time and freeze one in the marinade.
3. Grill on indirect heat until done--we use a meat thermometer reading of 155 degrees, as the temp rises once it sets.
The marinade is flavorful, but may seem a bit salty for some. I think this is great with some rice and veggies.
