Chicken spinach Lassagna

Yummy, good source of green vegetable. Kids love it, husbands go back for 3rds. Freezes well. Leave out chicken for vegetarian.

Ingredients

1 box Lassagna noodles

1 jar Favorite pasta sauce

1 Lg container of cottage cheese

1 Lg bag of mozarella

1 Container of parmesean cheese

1-2 Pkgs chopped frozen spinach

Depending on size of container

1 pkg Italian dressing powder

3 Boneless, skinless, chicken breast

Preparation

Thaw spinach, rinse and drain. Boil chicken, drain, trim fat, and chop or shread. Preheat oven to 350. In a lg mixing bowl, mix 1/2 a container of parmesean, 3/4 bag of mozzarella, cottage cheese, spinach, chicken, and italian dressing packet. In a 9x13 baking dish put a thin layer of sauce. Then a layer of dry uncooked noodles. Next, mix remainder of sauce with chicken cheese mixture. From here on continue layering chicken cheese mixture, noodle, mixture, noodle until you are out of noodles. Put final layer of cheese chicken mixture on top. Then sprinkle remainder mozarella and parmesean for final layer. Put aluminum foil over top and bake until noodles are soft. Approx, 25-35 minutes. Uncover, and bake until cheese on top is golden brown. (hint turn oven to broil and watch closely to brown cheese)

Cook's Notes

You can substitute chicken for hamburger or sausage. Also if you use all low cal, low fat, it is just as delicious. Add a fruit to this meal and you have a completely balanced meal. If you like this, check out my spinach dip, and my stuffed shells.
