KMCN Korean Chinese Dumplings

Ingredients

1/2 lb (1 cup) ground pork

1/2 cup Chopped onion

1/2 cup Finely cut Chinese chives (puch'u)

1/2 t Salt

A.

1 t Soy sauce

1 t Chopped green onion

1 t Chopped garlic

1/2 t Ginger juice

1 t Sesame oil

Dash pepper

Preparation

1. Season 1 cup (1/2 lb) ground pork with A ingredients. Mix with chopsticks whisking one direction only. Add chopped onion, finely cut Chinese chives and salt.

2. Make the skin the same way as for mandu. Chinese restaurant dumplings are soft and tasty because they have more fat. To make the filling soft add a generous amount of cooking oil. Homemade skins taste better, but the thick Chinese dumpling skins taste like homemade. Bought skins will seal better if you brush the edges with egg whites.
