Bean and Cheese Burrito

Ingredients

1 12-inch fat-free flour tortilla
1/3 cup Canned black beans, mashed
1/4 cup Spicy salsa
1/4 cup Shredded reduced-fat Cheddar cheese
1 tablespoon Sliced green onions
1 tablespoon Sliced, pitted ripe olives
2 tablespoons Diced tomato
1/2 cup Thinly sliced romaine lettuce
2 tablespoons Fat-free sour cream

Preparation

Preheat the oven to 350 degrees F. Mix the beans, half the salsa, cheese, onion, and tomato in a small bowl. Place the tortilla on a large piece of aluminum foil. Spoon the bean mixture in the middle of the tortilla, but slightly off-centre. Fold the tortilla. Wrap the foil around the burrito and bake for 10 to 15 minutes or until hot. Top with lettuce, remaining salsa, and sour cream.
