Ingredients
1/4 cup Dijon mustard, thinned with 2 Tablespoons water
2/3 cup Pure maple syrup
2 teaspoons Dried sage (rubbed or ground)
2 teaspoons Curry powder
2-3 pounds Chicken pieces (I always remove the skin and the dark meat pieces work best here...I usually only make 2 pounds for our family)
Preparation
Preheat oven to 425 degrees. In a saucepan, combine the dijon, maple syrup, and spices. Heat and stir til well combined. Arrange chicken pieces in a foil lined baking pan so that the pieces are somewhat crowded together. Pour sauce mixture over the chicken pieces, turning to coat. Bake uncovered BASTING every 10-15 minutes for about 1 hour, til golden and coated. Very good served with basmati rice. If you use chicken with skin on, the sauce may be very oily or greasy and you can pour it off; I usually do not have a problem with the sauce since I take the skin off and we love the sauce spooned over the rice.
