| 1- can | Chicken in Water |
| 1- 8 oz | Tub Sour Cream (lite if you prefer) |
| 1-pkg | Corn Tortillas |
| 1-bunch | Green Onions |
| 1-pk of 16 oz | Cheddar Cheese (low fat or fat free by Kraft if you prefer) |
| | To tast Garlic Salt or powder which ever you prefer to taste |
| 2-cans | Old El Paso Enchilada Sauce (it's red sauce) |
1. Pre-heat oven to 350 degrees. Drain Chicken and cut green onions
2. Combine the Chicken, Sour Cream, Green Onions (as much as you prefer), 8 oz of Cheese, Garlic to taste, and 1/4 can of Enchilada Sauce and mix good.
3. Heat tortillas in microwave until they are able to be folded without tearing.
4. In a pan 13 x 9 pan, pour enough Enchilada Sauce to cover the bottom.
5. Take a tortilla and fill with your mixed filling, roll up and put in pan. Repeat until pan is full.
6. Pour Enchilada Sauce over the top of the rolled enchiladas until they are completely covered.
7. Put into oven and let bake until it starts to bubble, then add 4 oz of Cheese to top and bake until melted.
8. Serve (optional to serve with Sour Cream and Tostidas)
Sounds like alot, but it is very quick and easy. You can cut calories and fat if you opt to use low fat or fat free products, but it doesn't change the taste! :) THey also freeze good!
