Beef Teriyaki Kabobs with Pineapple Sesame Rice

Ingredients

For Beef:

8 - 9 Inch bamboo skewers

2 Swift Pemium Teriyaki Seasoned Beef Shoulder Filets (about 1 1/4 pounds)

2 Medium red or green bell peppers, cut into 1 inch pieces

1 Medium red onion, cut into 1/2 inch wedges

For Rice:

2 cups Cooked jasmine rice

1 - 14 oz. Can pineapple chunks in heavy syrup, drained, coarsely chopped, juice reserved

1 Jalapeno pepper, seeded and minced

1/4 cup Chopped fresh cilantro

1 tbsp. Fresh lime juice

1 tsp. Dark sesame oil

1 tbsp. Toasted sesame seeds

Preparation

Soak bamboo skewers in water for 10 minutes, drain.

Cut beef into 1 1/2 inch pieces. Alternately thread beef, peppers and onion pieces onto skewers.

Place kabobs on a grill over medium ash covered coals. Grill, covered, for 6-8 minutes for medium rear to medium, turning occasionally and brushing with reserved pineapple juice.

Prepare Pineapple Sesame Rice: Combine all ingredients; serve with kabobs.
