Tasty meatless spinach lasagna.

Ingredients

1 Egg
2 cups Shredded, part-skim mozzarella cheese, divided
1 Container fat-free rocotta cheese (15 oz.)
1/4 cup Grated Parmesan cheese
1 package (10 oz.) frozen chopped spinach, thawed and drained
5 cups Jarred marinara pasta sauce
12 No-boil lasagna noodles.

Preparation

Preheat oven to 350 degrees. Coat a 13 X 9 X 2-inch glass baking dish with cooking spray. In a medium bowl, mix together egg, 1 cup mozzarella, ricotta and Parmesan cheese. Add spinach and mix well. Spread 1 cup pasta sauce on bottom of baking dish. Arrange noodles side by side on top of sauce, over-lapping slightly. Spread 1 cup spinach and cheese mixture on top of noodles. Repeat layering with pasta sauce, noodles and spinach and cheese mixture 3 more times. Top with remaining 3 noodles and 1 cup sauce. Cover lasagna with foil and bake 25 minutes. Uncover; top with remaining 1 cup mozzarella cheese and bake additional 25-35 minutes or until cheese is light golden brown.
