Preparation
Beat the eggs with salt and add minced scallions.
Heat oil in a large frying pan. Spread a thin layer of egg batter and cook. As it cooks, use a spatula under an end, then fold over and over to make a roll as the egg cooks. Once in a roll, turn over to lightly brown the egg. Remove from heat and let the omelet roll cool. Cut into slender pieces and serve it as a side dish with rice.
