Smoked Mozzarella and Veggie-Stuffed Pizza

Ingredients

1 lb Fresh, cut stir-fry vegetables, like broccoli, zucchini, mushrooms, bell pepper, red onion

1/4 cup Tomato paste

2 tbsp Olive relish

2 tbsp Sun-dried tomato bits

1 Prepared thin pizza crust (12-inch or 10 oz.)

1/4 cup Chopped mixed green herbs such as chives, thyme, parsley, basil

1/2 cup (2 oz.) finely shredded smoked mozzarella cheese

Preparation

Heat oven to 425 degrees. Heat a large nonstick skillet over medium-high heat until hot. Coat with cooking spray; add vegetables. Stir-fry 3 to 4 minutes or until vegetables are crisp-tender. Add salt and pepper to taste. Combine tomato paste, olive relish, and sun-dried tomato bits. Spread over pizza crust; top with cooked vegetables, herbs, and cheese, in that order. Bake the pizza directly on oven rack for about 10 to 15 minutes, or until crust is golden brown and cheese melts.
