Ingredients

3 cups Cubed cooked chicken
1/2 cup Chopped green onions
8 (10-inch) low-carb white tortillas
3 cups Shredded Cheddar cheese
1 cup Heavy cream
6 Large eggs, lightly beaten

Preparation

(1) Preheat oven to 350 degrees.

(2) Combine chicken and onion. Spoon just a little over 1/3 cup down center of each tortilla. Sprinkle with 2 cups of cheese divided among the tortilla. Roll up, seam-side down, in a sprayed 13x9-inch baking dish.

(3) Combine cream with 1 cup water and eggs; pour over tortillas. Cover with foil and bake 30 minutes.

(4) Uncover; sprinkle with remaining cheese and bake 10 to 15 minutes or until custard is set. Let stand 10 minutes.

**For easier serving, cut lengthwise down center of entree.

**Can be made ahead and refrigerated before baking. You may have to increase baking time. Nutrient analysis if yield = 16/
