Quick & yummy bean salad
1 can Black beans
1 can Black-eye peas
1 can Red kidney beans
1 Small can corn kernels
2 cloves Fresh minced garlic
1/2 cup Store bought italian salad dressing
mix all ingredients in large bowl. let sit for 15 minutes, or overnight in refridgerator. serve over brown rice or cous cous
you can add fresh vegetables or use a homemade vinagrette if you like. if you add tomatoes, use canned. fresh tomatoes spoil quickly in the dressing. this recipe is extremely cheap to make. it can serve 4-6.
