| | Chili Seasoning mix: |
| 3/4 cup | Chili powder |
| 2 tbsp. | Ground cumin |
| 2 tbsp. | Dried oregano |
| 2 tbsp. | Dried minced onion |
| 2 tbsp. | Sugar |
| 2 tsp. | Dried minced garlic |
| | Chili: |
| 1/3 cup | Chili seasoning mix |
| 2 lbs. | Lean ground beef |
| 2 (14.5 oz) cans | Diced tomatoes with green pepper, celery, and onion |
| 2 *8 oz) cans | Tomato sauce |
| 1 (16 oz) can | Black beans, undrained |
| 1 (15.5 oz) can | Small red beans, undrained |
| | Optionals toppings: |
| | Reduced Fat cheese |
| | Onions, |
| | Sour cream |
Stir together the indredients for the chili seasoning mix. (you'll have left overs for the next time you make this recipe. Can store in an airtight container for up to 4 months)
1. Brown beef in a Dutch oven over med. high heat, stirring often, 4-5 muntes or until beef crumbles and is no longer pink; drain well. Return beef to dutch oven; sprinkle evenly with seasoning mix, and saute 1 minute over med. high heat.
2. Stir in Diced tomatoes and remaining ingredients; bring to a boil over medium high heat, stirring occastionally. Cover, reduce heat to low, and simmer, stirring occastionally for 15 minutes.
3. Top with Favorite ingredients:
Reduced fat cheese, Onions, low fat sour cream, etc...
Makes a ton, good for freezing or leftovers. Serve with a salad and or cornbread!
