Ingredients

Chili Seasoning mix:
3/4 cup Chili powder
2 tbsp. Ground cumin
2 tbsp. Dried oregano
2 tbsp. Dried minced onion
2 tbsp. Sugar
2 tsp. Dried minced garlic
Chili:
1/3 cup Chili seasoning mix
2 lbs. Lean ground beef
2 (14.5 oz) cans Diced tomatoes with green pepper, celery, and onion
2 *8 oz) cans Tomato sauce
1 (16 oz) can Black beans, undrained
1 (15.5 oz) can Small red beans, undrained
Optionals toppings:
Reduced Fat cheese
Onions,
Sour cream

Preparation

Stir together the indredients for the chili seasoning mix. (you'll have left overs for the next time you make this recipe. Can store in an airtight container for up to 4 months)

1. Brown beef in a Dutch oven over med. high heat, stirring often, 4-5 muntes or until beef crumbles and is no longer pink; drain well. Return beef to dutch oven; sprinkle evenly with seasoning mix, and saute 1 minute over med. high heat.

2. Stir in Diced tomatoes and remaining ingredients; bring to a boil over medium high heat, stirring occastionally. Cover, reduce heat to low, and simmer, stirring occastionally for 15 minutes.

3. Top with Favorite ingredients:

Reduced fat cheese, Onions, low fat sour cream, etc...

Cook's Notes

Makes a ton, good for freezing or leftovers. Serve with a salad and or cornbread!

I had never made or even liked chili previous to finding this recipe. Honestly I just used it to make up a batch for my hubby to take to work. Turned out to be the BIGGEST hit ever! I have two young daughters, a 3 year old and a 1 1/2 year old. Both are somewhat picky about food some times so I didn't think in a million years they would eat it. Boy was I wrong, we ALL love it! Friends make sure to visit when they know it is chili night now. I'm not even a meat liker pretty much at all but this is hands down a 5 star for sure!!!
