Ingredients
1 lb. Pork sausage
10 Eggs lightly beaten
3 c. Milk
2 t. Dry mustard
1 t. Salt
6 c. Cubed bread
2 c. Shredded sharp Cheddar cheese
1/2 t. Black pepper
1/2 c. Sliced mushrooms*
1 Med. tomato, seed and chopped*
1/2 c. Thin sliced green onions *
Preparation
Preheat oven to 325 F. In large skillet cook sausage over medium high heat, stirrin frequently until no longer pink. In large mixing bowl, combine eggs, milk, mustard, and salt, stir well. Distribute half the bread in a buttered 9x13x2 baking dish. Sprinkle with half the pepper and half the cheese. Top with hlaf of the sausage, add half of the optional ingredients. Repeat layering process. Pour egg mixture over casserole. Bake uncovered 60 minutes or until eggs are set. Tent with foil if browing occurs.
