Guacamole
For the guacamole it is best to make about 30 minutes before putting everything together.
First cut the avocadoes in half and take out the pit, mash them up until it gets to the consistency you like. I like mine slightly chunky.
In a medium bowl mix together avocadoes, about 2 tablespoons of sour cream, ground cumin, salt, lemon juice, chopped tomato and garlic powder. Remember to add to taste. Start with small amounts and keep adding until it tastes just right. I also put in a pinch of sugar, but its not required. After the guacamole is made place it in the refrigerator for about 30 minutes to let all the spices set.
Dip
In a dish, (I use a rectangle Tupperware dish, anything will work), place guacamole on the bottom, then add the chunky salsa, top that with the sour cream (spicing the sour cream with taco seasoning or cumin works if you want a little more spice) and top with cheese. And there you have a fantastic easy dip!
You can use store bought guacamole as well. I just like making my own. You can also use fat free or reduced fat sour cream and cheese to lower calories. Enjoy with tortilla chips.
