Banana Bread/Cake

Ingredients

½ cup + 2 Tbsp. sour cream

2 tsp Baking soda

1 cup (2 sticks) butter, room temperature

2 cups Sugar (or subst. with 1 cup sugar and 1 cup Splenda)

4 Eggs

2 cups Mashed ripe bananas (about 4 or 5)

4 cups All purpose flour

1 tsp. Baking powder

1 cup Chopped walnuts or pecans

Preparation

1. Preheat oven to 350°F. Makes two 9x5” loaves, a 13x9” pan, two 8” square or two 9” round pans, and can be made into 24 muffins. Prepare pans with nonstick spray and/or parchment or muffin liners.

2. Combine sour cream and baking soda in a small bowl. Using electric mixer, cream butter and sugar in a large bowl. Beat in eggs, bananas, and sour cream mixture. Sift in flour and baking powder. Stir in nuts. Spoon mixture into prepared pans. Bake until toothpick inserted into center comes out clean and loaf is golden brown, about 1 hour (less time for muffins, about 25-30 minutes). Cool 10 minutes in pan. Turn out onto rack and cool completely. Great with cream cheese frosting (see recipe below).

Cream Cheese Frosting

INGREDIENTS:

• 2 (8 ounce) packages cream cheese, softened

• 1/2 cup butter, softened

• 2 cups sifted confectioners' sugar

• 1 teaspoon vanilla extract

DIRECTIONS:

1. In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Store in the refrigerator after use. Can be made into chocolate frosting by adding ¼ to ½ cup cocoa, depending on how rich you want it.

Great served warm with butter.
