Last-Minute Lasagna

Using frozen store-bought ravioli makes this dish easy and tasty. Kids can help squeeze dry the spinach and layer the ravioli. If you don't want to turn on your oven, try microwaving this dish (without the tin foil.)

Ingredients

1 (24 to 26 ounce) jar pasta sauce
2 (16 to 18 ounce) bags frozen large cheese ravioli, thawed
1 (10 ounce) box Frozen chopped spinach, thawed, squeezed to remove excess water
1 (8 ounce) bag Shredded mozzarella
1/2 cup (2 ounces) grated Parmesan cheese

Preparation

Heat oven to 350 degrees. Spoon 1/3 of pasta sauce into a 9 by 13 inch baking dish. Place half of ravioli on top of sauce in single layer. Sprinkle with spinach and half of mozzarella. Layer on remaining ravioli (you may not need all of them). Top with remaining sauce, mozzarella and Parmesan cheese. Cover with aluminum foil and bake 25 minutes. Uncover and bake until bubbling, 5 to 10 minutes more.

Cook's Notes

You can also use refrigerated ravioli for this recipe. Nutrient info will vary based on the brands of ravioli, tomato sauce and cheese. Cut fat, sodium and calories by using skim-milk cheeses and reduced-sodium tomato sauce.

I totally do this same recipe with spinach and cheese ravioli from Costco. Plus it comes with a yummy parmesan / herb mixture to add to the top.
