Microwaved Potato Lunch

This is great for a low calorie and low fat lunch that is quick, cheap, and easy!!

Ingredients

1 Russet potato

1/2 cup Plain nonfat yogurt

1/4 cup Your favorite salsa

Preparation

1. Poke holes into potato with a fork.

2. Microwave on baked potato setting, or for 6 minutes. (Time will vary according to size of potato).

3. Remove potato and top with yogurt and salsa for a filling and fat-free lunch.
