Black-Eyed Pea Soup

Black eyed peas are a food that I tend to forget about. I make something with them, and love it, but then I move on and forget about them. They are very versatile and great in soup, or cold in salads.

Ingredients

2 (32 ounce) containers of chicken stock
6 ounces Dried black-eyed peas
2 cups Diced smoked turkey ham
1 cup Chopped onion
1 (14.5 ounce) can Diced tomatoes
1/2 cup Chopped celery
2 teaspoons Cajun seasoning
1 cup Chopped bell pepper

Preparation

1. Combine stock, black-eyed peas, turkey ham, and onion in a large pot.

2. Bring to a boil, reduce heat to low and simmer, covered, for 45 minutes.

3. Add tomatoes, celery, and seasonings and simmer for 30 more minutes, adding bell pepper during the last minutes of cooking.

Cook's Notes

*Use low sodium broth to reduce sodium. *Nutrient analysis done with regular chicken broth.
