Banana Pancakes

Easy to make! I make a big batch and freeze them. If you make them big enough, you can warm them up in your toaster.

Ingredients

1 cup All-purpose flour
1 tablespoon White sugar
2 teaspoons Baking powder
1/4 teaspoon Salt
1 Egg, beaten
1 1/3 cup Milk
2 tablespoons Vegetable oil
2 Ripe bananas, mashed

Preparation

Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.

Stir flour mixture into banana mixture; batter will be slightly lumpy.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

Cook's Notes

If you like thicker pancakes, use only 1 cup of milk.

Good pancakes, however I added a touch of cinnamon, 2 tsp more sugar, and .5 tsp of vanilla extract. Also on the milk, I used around 1.25 cups and would suggest the 1 and 1/3 the recipe suggests if you like your pancakes to spread on their own.
