Busy Day Guadalajara Chicken and Rice Skillet

This is a great quick and easy one-pot dinner.

Ingredients

3 Boneless chicken breasts

1 15 ounce Jar of salsa

1 cup Low-sodium chicken broth

1/2 cup Chopped green pepper

1 cup Quick cooking rice

1/2 cup Shredded low-fat cheddar cheese

Preparation

1. Cut the chicken into 1-inch cubes

2. Heat 1/4 cup of chicken broth and saute chicken until cooked (use a medium sized pot).

2. Stir in salsa, the rest of the chicken broth, and green pepper. Bring to a boil.

3. Stir in the uncooked rice.

4. Sprinkle with cheese, cover, and remove from heat.

5. Let stand 5 minutes until rice is cooked
