Picante Pork Chops

Ingredients

8 (6-ounce) bone in center cut loin pork chops (about 1/2 inch think), trimmed
Cooking spray
1 (16 ounce) jar Thick and chunky picante sauce
1 package Pre-formed Polenta

Preparation

1. Heat a large skillet coated with cooking spray over medium-high heat.

2. Add chops, cook until browned on both sides.

3. Pour 1/4 picante sauce into an electric slow cooker and add chops. Top with remaining picante sauce. Cover with lid, and cook on high-heat setting 3-4 hours.

4. 20 minutes before serving, slice polenta into 1/2 inch slices and warm over medium heat.

5. Remove chops and plate over polenta. Reserve 1 cup sauce to serve over chops.

Cook's Notes

To remove excess fat from the sauce, drop an ice cube into the sauce, and remove the ice with a slotted spoon. The hardened fat will cling to the ice cube. Serve with polenta and your favorite vegetable. *Nutrient analysis includes 3 slices of warmed polenta.

This was very good. For lunch the next day we heated leftover polenta and remaining sauce from the porkchops.
