Black Beans & Rice with Pork

A spicy meal in itself.

Ingredients

Rice:

1 teaspoon  Olive oil

3 cloves  Minced garlic

Chopped onion

2/3 cup  Uncooked white rice

1/2 teaspoon Oregano

1/4 teaspoon  Cayenne pepper

1 teaspoon  Ground cumin

1 can Black beans

1 can Diced tomatoes w/ chilis

Chopped fresh cilantro

Pork:

3 lbs. Cheap pork chops

2 cans Beef consomme

1 jar Salsa

Preparation

Make the pork 4 hours or more ahead. See Below:

For the rice:

Heat the oil in a large pot over medium/high heat. Add the onion and garlic and saute for 4-5 minutes. Add the rice and saute for 2 minutes.

Add the black beans (not drained), tomatoes, and spices.

Bring to a boil, cover and cook for 35-40 minutes on low. Stir after 15 to make sure it's not sticking too much.

Garnish with chopped fresh cilantro

For the Pork:

I just use the cheap pork chops, you know, center bone or no bone, whatever is on sale. Put them in a big skillet or pot and cover with a can of consomme (or 2 if needed) and however much salsa you want, like maybe 1/2 a jar. Then I just let it simmer, uncovered, for about 4-5 hours on the lowest, until the liquid reduces. It should fall apart, with practically all the fat cooked off of it, and the liquid and salsa are all cooked down. That's it! I guess you could use a butt or shoulder, but with the already cut-up meat the flavors get in better.
