Preheat oven 350 degrees. Spray nonstick spray on small baking dish. Place 2 chicken breast cutlets in dish. Spread pesto evenly over chicken cutlets to the edges. Top with grated cheese. Bake at 350 for 30-35 minutes, or until cheese is well browned and internal temp is 165 degrees.
Chill 2 dinner plates in the freezer. When plates are well chilled and chicken is almost finished, take the plates out and layer lettuce on bottom of plate. When chicken is done cooking, slice chicken into strips and place on bed of lettuce. Sprinkle olives around the chicken for garnish. Top the whole thing with Caesar dressing.
