Asian Vegetable Stir-Fry

A nummy side!

Ingredients

1 tbsp. Sesame oil

2 c. Sliced shiitake mushrooms (no stems)

4 c. Sliced bok choy

1 c. Short, thin strips of red bell pepper

1/2 1 medium onion, sliced

1 Large clove of garlic, pressed or thinly sliced

1 tbsp Lite (reduced-sodium) soy sauce

Preparation

1. Heat oil in 12-inch non-stick skillet over high heat. Add mushrooms and stir-fry 1 minute; add bok choy, red bell peppers, onion, and garlic and stir-fry 2 minutes.

2. Stir in soy sauce and stir-fry 1minute more for tender-crisp vegetables. Serve hot.
