Baked Potato Soup

Fix it and Forget it

The best tasting baked potato soup you will ever make! I have received SO many compliments on this soup! Great for those cold evenings, and served with a french or sour dough bread.

Ingredients

4 Large baked potates
2/3 cup Butter
2/3 cup Flour
6 cups Milk, whole or 2%
3/4 tsp. Salt
1/2 tsp. Pepper
4 Green onions, chopped
12 slices Bacon, fried and crumbled
2 cups Shredded cheddar cheese
1 cup Sour cream

Preparation

1. Cut potatoes in half. Scoop out pulp and put in small bowl.

2. Melt butter in large kettle. Add flour. Gradually stir in mild. Continue to stir until smooth, thickened and bubbly.

3. Stir in potato pulp, salt, pepper, and three-quarters of onions, bacon and hceese. Cook until heated. Add sour cream.

4. Transfer to slow cooker and top with remaining onions, bacon and cheese, OR leave in large pot, top with these items and serve immediately!

Maybe should have 4 cups milk and 2 cups water instead of 6 cups milk...and a little more salt and pepper...just writing this comment for myself to see next time i make it!
