Clean and boil a whole chicken (or turkey) until very tender.
Discard fat and bone.
Cut and shred into small pieces; refrigerate.
In blender, blend until liquid:
1 large can tomatoes
1/4 can water (use large tomato can)
1 Tbs. cumin powder (start with less and add to taste)
1 Tbs. salt (start with less and add to taste.)
1/2 tsp. pepper
4 cut up cloves of garlic
1 large cut up onion
Put sauce in pot large enough to also hold chicken. Bring to boil and simmer ten minutes.
Add chicken and mix well. Simmer through.
Fill Taco shells with chicken mixture along with your favorite ingedients, such as refried beans, lettuce, diced tomatoes, shredded cheese, and salsa. YUM!
This makes a TON of chicken taco filling, but it freezes well. You can also freeze just the liquid and make a smaller amount of chicken at a time.
