Pizzelle

A fun italian pastry/cookie, usually made at Christmas time.

Ingredients

6 Eggs

3 1/2 cups Flour

1 1/2 cups Sugar

1 cup Margarine (1/2 butter)

4 tsp. Baking powder

2 tbsp. Vanilla

Preparation

1. Beat eggs, adding sugar gradually until smooth.

2. Add cooled, melted butter and margarine and vanilla.

3. Sift flour and baking powder and add to egg mixture. Dough will be sticky enough to be dropped by spoonful on pizzelle maker. (Similar to a waffle iron.)

Cook's Notes

Can be eaten plain or with a sweet topping such as powdered sugar or jelly.
