Savory Shrimp & Sausage Rice

Ingredients

1/2 lb. Italian Sausage

1 can (14 1/2oz.) Del Monte Fresh Cut Diced Tomatoes with Garlic & Onion

1 1/4 cups Chicken Broth

1 cup Uncooked Long Grain White Rice

1 can (15 1/4oz.) Del Monte Fresh Cut Peas, Drained

1/4 lb. Raw Shrimp, Shelled and Deveined

3 Green onions, diced (optional)

Preparation

1. Brown sausage in a large skillet; Drain.

2. Add tomatoes, broth and rice and bring to a boil.

3. Cover and simmer 25 minutes, adding peas and shrimp during last 8 minutes. Garnish with diced green onion if desired.

Cook's Notes

You may substitute chicken cubes for the shrimp and add the chicken with the tomatoes, broth and rice.
