Apricot-Curry Pork Roast

Celebrate Easter with our modern take on a classic Pork Roast.

Ingredients

1 3lb Boneless pork loin roast, trimmed,tied
1/2 tsp Salt
1/4 tsp Black pepper
3 tbsp Apricot preserve
2 tbsp Chopped dried apricot
2 tbsp Brown sugar
1 tbsp Lemon juice
1 tsp Grated ginger
1/2 tsp Curry powder

Preparation

1. Heat oven to 350F. Sprinkle pork with salt and pepper. Place in large foil-lined roasting pan.

2. In small bowl, combine remaining ingredients. Brush mixture ontopork. Cook in the oven for 65 to 70 minutes, or until meat themometer registers 160F. Let rest 15 minutes before slicing.
