| 1 3lb | Boneless pork loin roast, trimmed,tied |
| 1/2 tsp | Salt |
| 1/4 tsp | Black pepper |
| 3 tbsp | Apricot preserve |
| 2 tbsp | Chopped dried apricot |
| 2 tbsp | Brown sugar |
| 1 tbsp | Lemon juice |
| 1 tsp | Grated ginger |
| 1/2 tsp | Curry powder |
1. Heat oven to 350F. Sprinkle pork with salt and pepper. Place in large foil-lined roasting pan.
2. In small bowl, combine remaining ingredients. Brush mixture ontopork. Cook in the oven for 65 to 70 minutes, or until meat themometer registers 160F. Let rest 15 minutes before slicing.
