Venison Roast Rub

We love our wild game and found this all purpose rub the easiest and best for our roast done on the bbq rottisserie

Ingredients

4 tbsp Mild paprika

1 tbsp Ground cumin seed

1 tbsp Ground coriander seed

1 tbsp Ground black pepper

Preparation

Preheat barbecue. Season the meat with a spice rub. Skewer roast, then place on rotisserie cradle. Bottom burners should be turned off, but leave the back burner on. Cook with lid down. Every 20 to 30 minutes baste with red wine, beer, tomato juice + Worcestershire sauce or your favourite basting liquid.

Use meat thermometer check for doneness.
