Florentine Baked Ziti

Ingredients

1 lb Ziti pasta

1 Medium yellow onion finely chopped (about 1 cup)

1 package (10oz) frozen thawed chopped spinach, squeezed dry

1/4 tsp Black pepper

2 cups Nonfat ricotta cheese

1 cup Shredded part skim mozzerella cheese

2 cups No-salt added tomoato suace

2 tbsp Grated parmesan cheese (optional)

Preparation

1. preheat oven 350. Cook pasta according to package directions, but to not add salt. Drain.

2. spray skillet with cooking spray and heat over medium heat. Add inion and cook, stirring until softened, about 10 minutes.

3. add spinach and pepper. Cook, stirring for 2 minutes. Cool slightly

4. in large bowl, combine spinach mixture, ricotta, and mozz. Mix well. Add pasta and toss to combine

5. spread 1/2 tomoato sauce in a 1 1/2 quart casserole dish. Place pasta mixture in casserole. dish. Top with remaining sauce. Sprinkle with parmesan. Bake until heated through, about 35 minutes.

Cook's Notes

to prepare in advance, prepare as recipe directs but to not bake. refrigerate for up to 8 hours.
