Easy Beef and Cheese Enchilada's

Contributed By: tristabelle
Grandma Connie

This is my moms super easy enchilada recipe. I grew up on these and now my kids do too. Everyone loves enchilada night around here.

Ingredients

1 pound Hamburger
1 can Cream of mushroom soup
1 can Chopped black olives
12 ounces Shredded cheese
1 can Enchilada sauce (we always use mild but you could use whatever you like)
10 Flour tortilla's

Preparation

Preheat oven to 350 degrees.

In a large skillet brown hamburger and drain.

While browning hamburger wrap up a handful of cheese and a sprinkle of black olives in the tortillas and place in a 9X13 pan.

Add enchillada sauce and cream of mushroom soup to hamburger in skillet and stir until well mixed.

Pour Hamburger mixture over tortilla's.

Cover with foil and place in oven for roughly 20 minutes or until cheese is melted.

Cook's Notes

My kids always help me wrap the cheese and olives in the tortilla's and love helping make this meal.
