| 1 6ounce | Can pineapple juice |
| 1/2 cup | Italian vinaigrette |
| 1/2 teaspoon | Jerk seasoning |
| 1 lb | Large shrimp, peeled and deveined |
| 1 | Scallion, chopped |
Heat grill. Combine 3 ounces of pineapple juice and Italian vinaigrette and 1/2 jerk seasoning; set aside.
Combine large shrimp and 3 ounces of pineapple juice, remaining jerk seasoning and scallion. Chill 30 minutes.
Grease grill. Remove shrimp from marinade; discard marinade. Grill shrimp 3 minutes or until opaque, turning once. Grill 1 pineapple, peeled, cored and cut into rings, 4 minutes turning once.
Line platter with 4 cups radicchio and/or green leaf lettuce. Top with pineapple, shrimp and 1 mango, peeled and sliced. Drizzle with dressing; top with scallion.
