Calypso Seafood Skewers

Great as an appetizer or a main dish

Ingredients

1 jar 12 ounce orange marmalade

1 tablespoon Honey

1 Lime, zested and juiced

1 lb Sea scallops

1 lb Large shrimp, peeled and deveined

18 Cherry tomatoes

1 Onion, peeled and cubed

1 Fresh pineapple, peeled, cored and cut into 18 2" pieces

Preparation

Heat broiler. In microwave-safe bowl in microwave, heat marmalade 1 minute. Stir in honey, 1 tablespoon lime zest and 2 tablespoon lime juice.

In bowl, combine 1 cup marmalade mixture, sea scallops and shrimp. Cover; chill 30 minutes. Thread scallops, shrimp and remaining ingredients onto skewers.

Place on greased broiler pan. Broil 6" from heat source 15 minutes, turning once and brushing with mixture.
