Taco Salad

Ingredients

3 lbs. Lean ground beef, ground chicken or ground turkey

1 cup Chopped onion

2 Pkgs. dry taco mix

2 - 14 oz. Can kidney beans

8 cups Torn lettuce

2 cups Chopped tomatoes

1cup "Thousand Island" dressing

1 cup "Catalina", or "French" dressing

4 cups Slightly crushed taco chips (Original Doritos is best)

2 cups Shredded cheddar cheese

1/2 cup Scallions or green onions

Preparation

Brown meat and onions. Stir in taco mix. Let meat cool. Add can of kidney beans.

IMPORTANT: Mix together only when ready to eat because the salad goes limp very quickly, once the dressings have been added. Sprinkle a few crushed taco chips on top of salad. Garnish with dollops of sour cream and/or salsa.

Note: This recipe has been doubled so you probably want to separate into two large bowls.

Cook's Notes

*This is a great recipe to bring on picnics. Prepare everything, keeping dressings and chips separate from the rest until you’re ready to eat. Mix and serve!
