Hot Chicken Salad

This is so yummy you have to try it! We even serve it on sandwiches but it is great alone too.

Ingredients

2 c. Cooked chicken breast meat, shredded or cubed
1 1/2 c. Diced celery
1/2 c. Sliced or slivered almonds
1/2 tsp Salt
1/2 tsp Grated onion
1/4 tsp Pepper
2 tbsp Fresh lemon juice
1 c. Mayonnaise
1/2 c. Grated Cheddar cheese
2/3 c. Crushed potato chips

Preparation

Preheat oven to 375 degrees. Spray a 13 x 9 inch baking dish wth cooking spray. In a large mixing bowl, combine chicken, celery, almonds, salt, onion, pepper, lemon juice, mayonnaise and cheese. Place the mixture in the prepared dish. Spread the potato chips on top. Bake for 20 minutes or until bubbly.

Cook's Notes

Can be made the night before and refrigerated. Reserve potato chips and put on just before baking.
