Bonny's Crockpot Chicken Fiesta

Great crockpot recipe, still healthy.

Ingredients

4 Boneless skinless chicken breast halves (4 oz each)

1 20 oz. Jar of Pace Picante Sauce

1 cup Frozen corn

1 15 oz. Can Black Beans, drained

2 cloves Garlic minced

2/3 cup Brown rice long grain

Preparation

Spray crockpot with nonfat cooking spray. Place chicken breasts in crockpot. Add remaining ingredients. Cook on high for about 5-6 hours. When done, shred chicken and return to pot. Cook another 15-30 minutes. Serve in tortillas for burritos (can add lettuce, FF sour cream, Lowfat cheese, etc) or on lettuce for a chicken taco salad.

Used this as tortilla filling, whole family liked it, and I had it for lunch the next day in a bowl with more salsa, cheese and sour cream with tortilla chips.

Wow! My family loved this recipe. They said it was the best recipe I ever made in the crockpot. Exchanged a jar of Herdez salsa instead of Pace, but otherwise made it exactly like it said. I'll double it next time- Thanks
