Frosted Pumpkin Softies

A simple cream cheese frosting complements these cake-like cookies. Fantastic for Halloween parties - or Thanksgiving dessert table.

Ingredients

1 cup (2 sticks) butter, softened
3/4 cup Firmly packed brown sugar
3/4 cup Granulated sugar
1 cup Canned pumpkin
1 Egg
1 teaspoon Vanilla
2 1/2 cups Quaker Oats (quick or old fashioned, uncooked)
1 3/4 cups All-purpose flour
1 teaspoon Pumpkin pie spice or ground cinnamon
1 teaspoon Baking soda
1/4 teaspoon Salt (optional)
1 3-oz Pkg cream cheese, softened
1 tablespoon Milk
1/2 teaspoon Vanilla
2 1/2 cups Powdered sugar
Yellow & Red food coloring

Preparation

Heat oven to 350 degrees.

Beat together margarine and sugars until creamy.

Add pumpkin, egg, and vanilla; beat well.

Combine oats, flour, pumpkin pie spice, baking soda and salt; add to above mixture and mix well.

Drop by rounded tablespoonfuls onto ungreased cookie sheet.

Bake 11 to 13 minutes until golden brown.

Cool 1 minute on cookie sheet; remove to wire rack. Cool completely.

For frosting, beat together cream cheese, milk, and vanilla until smooth. Gradually beat in powdered sugar until smooth; tint with food coloring, if desired. Frost top of each cookie. Store in tightly covered container in refrigerator.
