Italian Spread

White bean spread--snack, appetizer.

Ingredients

2/3 Onion, minced

2 tbsp Olive oil

2 cans Beans (great northern, cannellini, or white) - Meg tried it with garbanzo and it wasn't as good.

1 tbsp Fresh sage, chopped

2 Garlic cloves, minced

2 tbsp Fresh parsley, minced

1 tbsp Fresh thyme, minced

1 tbsp Lemon juice

1/2 cup Shredded asiago (optional)

1 tsp Pepper (add salt if you are skipping the cheese)

1 cup Chicken or vegetable broth

1/4 cup White wine

Preparation

Heat 1 tsp olive oil in skillet.

Add onion and brown.

Stir in sage, thyme, pepper, and garlic.

Add broth and drained/rinsed beans

Reduce heat and cook 5 minutes until liquid is absorbed.

Cool to room temperature.

Place beans, parsley, and remaining olive oil into food processor.

Blend until smooth.
