Irish mashed potatoes dish. Traditionally the scallions are simmered in milk before being added to the potaoes. Chopped fresh parsley or chives, or fresh green peas could be used instead of the scallions.

Ingredients

6 Large russet potatoes, peeled, if desired, and cut into chunks

1 cup Chicken stock

1 cup Whole milk

1 bunch Scallions, white and green parts, finely chopped

6 tbsp Unsalted butter

Salt and freshly ground black pepper

Preparation

Place the potatoes in the slow cooker and add the stock. Cover and cook on high for about 2 hours, until the potatoes are tender.

Transfer the potatoes to a bowl and mash with a potato masher. While the potatoes are still hot, add the milk, scallions, and 4 tablespoons of the butter. Mix well and season to taste with the salt and pepper.

Place the remaining 2 tablespoons butter on top of the potatoes to melt and serve immediately.
