Easy Pancakes

My best friend's mother

These are not typical pancakes. They are thinner, but make a great meal or snack for kids and adults.

Ingredients

1 cup Milk

1 cup Flour

2 Eggs

Pinch of salt (optional)

A dab of vegtable oil (optional)

Butter (optional)

All kinds of pancake toppings

Powdered Sugar

Cinammon Sugar

Peanut Butter

Jelly

Syrup

Bananas

Peaches

Whipped Cream

Strawberries

And anything else you might enjoy

Preparation

1. Combine milk, flour and eggs in a mixing bowl. You can whisk by hand or use an electic mixer. There should be no lumps when finished.

2. Add the salt and oil, if you would like.

3. Preheat electric griddle to about 325-350 degrees. You can also use a regular pan and stove if you'd prefer.

4. Melt butter onto griddle surface.

5. Using a measuring cup or spoon, pour mixture onto griddle to make your desired pancake shape.

6. When edges of pancake begin to look dry, flip pancake. The underside should be cooked, but not necessarily brown.

7. Continue to cook for another 90 seconds or until side is cooked.

8. Remove from griddle and load with your choice of topping.

9. Reapply butter to griddle after every other batch. I find this keeps the butter on every pancake.

9. Usually, I sprinkle powdered sugar on the pancake, roll it up and eat it using my fingers.

Cook's Notes

These refrigderate or freeze very well and can be reheated or eated cold. I love peanut butter and jelly rolls on cold pancakes. The recipe originially calls for 12 eggs and 6 cups of milk, but as my friend's family grew up and siblings moved out of the house, her mother reduced the recipe. This recipe makes around 18 5" pancakes. Kids love making these, as they can design shapes with the batter and eat them with their fingers.
