Ingredients

2cups Unbleached flour
1 Packet sugar substitute
1tbs Baking soda
8oz Fat free plain yogurt
1 Large very ripe banana
1/2cup Skim milk
1/2tbs Canola oil
1tsp Vanilla
4 Egg whites, beaten to soft peaks
Butter flavored cooking spray

Preparation

combine flour, sugar sub, and baking soda in a large bowl, and stir

add the yogurt, banana, milk, oil, and vanilla, stir until just moistened.

gentaly fold in the beaten egg whites

lightly coat a non-stick pan w cooking spray and bake until brown on both sides, making about 4inch pancakes
