2 tbsp. Chopped dates
1 oz. Neufchatel cheese, softened
1 tbsp. Peanut butter
1/2 tsp. Grated orange rind
4 Medium Red Delicious apples, cored
1) Combine the dates, cheese, peanut butter, and orange rind, stirring well.
2) Stuff 1 tablespoon of the mixture into the cavity of each apple. Cut each stuffed apple into 6 slices. Serve immediately.
Yield: 24 slices
