Avacado-Orange Salad

"Don't miss this combination of the cool avocado and slightly acidic dressing. It's a great change from the typical entree salad, but the fat in the avocado makes it deliciously filling."

Ingredients

3 tbsp. Orange juice

1 1/2 tbsp. Olive oil

1 tbsp. Lemon juice

1 1/2 tsp. Splenda

1 tsp. Dijon mustard

1/2 tsp. Salt

1/2 tsp. Pepper

10 oz. Bag mixed salad greens

1 Ripe avocado, peeled, seeded, and diced

11 oz Can mandarin oranges, drained

3 Green onions, thinly sliced

Preparation

1) Combine the orange juice, olive oil, lemon juice, Splenda, mustard, salt, and pepper together in a medium bowl. Whisk to blend and make the dressing.

2) Combine the salad greens, avocado, oranges, and onions in a large bowl. Toss gently with the dressing to coat.
