Chauncey - Low Carb Dieting for Dummies

1 carb choice per serving. Using canned vegetables in this soup makes it a breeze to prepare. You can easily make a hearty weeknight meal in under an hour. Of course, the longer it simmers, the better the flavor - but either way, this soup's a winner.

Ingredients

Vegetable cooking spray

1 16oz. Package Healthy Choice small link sausages, cut in pieces

1 Med-large onion, quartered

2 14.5oz Cans sliced potatoes, drained*

2 10oz. Cans diced tomatoes and green chilies

1 14.5oz Can stewed Mexican-style tomatoes

1 16oz Can tomato juice

2 4oz. Cans mushroom stems and pieces, drained

2 c. Water, if needed

Preparation

1) Spray bottom of a 4-quart saucepan with cooking spray. Brown the cut up sausages and onion.

2) Add all the other ingredients to the saucepan. Simmer for 30 minutes.

Cook's Notes

*to make a Green Light food, eliminate potatoes.
