I made up this recipe to try to match the delicious stuffed crepes I tasted at the Grand View Inn on the shore in Monterey, CA.
6-8 Blini (crepes)
2 1b Ricotta Cheese part-skim
1 Egg
1/2 cup Sugar
1/2 cup Fruit jam or pie filling
Stir together egg, ricotta and sugar. Wrap spoonful of mixture in crepe. Place rolled crepes in baking dish. Cover. Bake at 350 degrees for 25 minutes or microwave for 6-9 minutes. Serve with warm jam or pie filling on top.
I always make this from sight. This is the first time I've attempted to write down the recipe so I hope it works! You may need to adjust the amount of sugar or cooking time.
